Ingredients
1 brown onion, sliced
1 cucumber, peeled, seeded, cut into 2.5cm pieces
125g green beans, cut into 2.5cm pieces
2 tablespoons vegetable oil
1 carrot, peeled & sliced
2 teaspoons turmeric
2 cloves garlic, crushed
2 tablespoons white vinegar
2 tablespoons sugar
1 ripe mango, sliced
¾ cup vegetable or chicken stock
1 tablespoon roasted unsalted peanuts, roughly chopped
Method
- Heat oil in wok over medium high heat. Add onion, garlic and carrot, stir-fry until lightly browned.
- Add turmeric, vinegar and sugar, stir-fry for 1 minute.
- Add mango, cucumber, beans and vegetable stock. Stir-fry for 5 minutes or until vegetables are just tender.
- Sprinkle peanuts over vegetables, serve with rice.
